Italian style courgette, basil and parmesan soup

What a crazy weather we had last few days. Beast from the East howling outside of our windows and snow storm Emma blowing from the Atlantic Ocean. And loads of snow….I mean loads of snow. Especially for this area. Last time we had a bit of snow was 6 years ago and now this.

Anyway when it comes, you have to make a most of it until it lasts and having some extra days without setting alarm clock  is always a bonus. Good excuse to enjoy  fun days building snowman, snowball fights and my sons latest invention…snow football. Nothing can stop Marek from playing football. Although it looked  more like an ice hockey than football. It was very difficult to stay up on our feet.There’s definitely a reason why football is played on a grass and not on a snow.

We even tried sledging from sand dunes on a beach (the only slope here) but the northern wind was really beastly and we had to give up sledging  and go home with eyes and mouth full of sand.

So we kinda enjoyed being snowed in until……… our bread maker broke down. After 5 years of a great service it decided enough is enough and it went into kitchen appliances heaven and left us. And guess what item disappears first from shop shelves when there’s bad weather and no delivery……BREAD.

No bread for breakfast, no cheese on toast, no crusty bread with soup. Yesterday I went finally food shopping again  and was so looking forward to have a slice of bread with butter. I was so naive, there was no bread at all. Empty shelves. The snow’s gone now but bread still didn’t come back.

It made me realise how vulnerable we’re in this time when we mostly rely  on machines, shops and supermarkets to get our food and also how much our family loves bread. I’m going to buy new bread maker soon but I want to do my research first so I’m going back to shop today and I’m keeping my  fingers crossed their shelves will be overflowing with various types of bread and I’ll take my time to pick the one that will go  best with my gorgeous Italian style courgette soup.

Only few ingredients but lovely rich flavours. This soup is also a message for whoever is in charge of  the weather        “Bring on the summer now!!!! ”

Btw….this soup like any other soup is  best served with crusty bread….if you have any……Enjoy! xxx

olive oil

2 garlic cloves, finely chopped

1 kg (cca 5) courgettes diced

a handfull of fresh basil leaves

600 ml vegetable stock

60 ml single or double cream

60 g grated parmesan

salt & pepper



Heat the oil in a large saucepan, then fry the garlic, courgettes and basil with a pinch of salt for about 10 minutes or until the courgettes softened. Add the stock, then simmer for another 10 minutes.Blitz the mixture in blender or food processor, reserving some of the courgette if you want a bit of texture in the soup, then return to the pan, stirring in any chunks of courgette you have reserved.Gently reheat, stirring in the cream,  and most of the Parmesan. Season with salt and pepper. You may want to thin the soup with some milk or stock.Serve with the reserved Parmesan sprinkled on top.
