Roasted tomato soup

Another soup from my large soup portfolio and one of the best soups to cook if you feel a bit under the weather.Soups and salads are great for increasing vitamin consumption and help  to keep illness and fatigue away. Very easy to make, rich in flavour, roasting  gives a tomatoes deeper flavours and make this soup very enjoyable. Tomato is considered a worlds healthiest food and we enjoy tomatoes in different form every day.

If I was writing a manual how to eat yourself healthy there would be a very long chapter dedicated to tomatoes and the wonders they can do to our well being.
When it comes to health benefits of tomatoes I really don’t know where to start. Tomatoes provide an impressive amount of vitamins A,C and K and significant amounts of B6, folate, thiamine. They are also good source of potassium, manganese, magnesium, phosphorous and copper.

Vitamin A – essential to healthy vision
Vitamin C – protect cells and keep them healthy
vitamin K – essential for build of strong bones, prevents heart disease
B6, Folate, Thiamine – , protecting the immune system, and having positive effects on metabolism, premenstrual syndrome,hormone control, emotional disorders, skin conditions, cardiac diseases, kidney disorders, carpal tunnel syndrome

I could go on and on about tomatoes they’re very good for us and I really like the fact they offer varied health benefits.

To give this soup more  rounded flavour and remove the sharpness of tomatoes I use root vegetables for the base.Onion and carrots for the sweetness, celery for it’s slight bitterness. The base helps to  make the taste well balanced.

Ingredients:

oil (rice bran, sunflower..)

medium onion

medium carrot

1 stalk of celery

3 garlic cloves

1 can of chopped or plum tomatoes

1L of water or veg stock

5 large ripe tomatoes

handful of basil

 

Method: 

Preheat oven to 190 C/ gas mark 5. Wash,core and cut tomatoes into quarters. Place the tomatoes on a baking tray, drizzle with oil and sprinkle with salt and pepper and roast for 40 minutes.

Meanwhile peel and roughly chop onion and carrot and  slice the celery. Heat oil in a pan over a medium heat, add all the prepped ingredients and cook for 10 minutes or until soft.

Add water or stock, tinned tomatoes  and crushed garlic to a pan and bring to the boil.Give it the good stir and simmer for 10 minutes.Remove the pan from the heat. Season to taste with salt and black pepper, then stir in basil leaves and liquidise the soup with stick blender or use liquidiser.

  1. First of all I want to say wonderful blog! I had a
    quick question in which I’d like to ask if you do not mind.
    I was interested to find out how you center yourself and clear your mind
    before writing. I have had a hard time clearing my
    thoughts in getting my thoughts out there. I truly do take pleasure
    in writing however it just seems like the first 10
    to 15 minutes tend to be lost simply just trying to figure out how to begin. Any suggestions or hints?

    • Hi 🙂 Thank you very much for your lovely and very encouraging words! Clearing mind is my everyday challenge. My mind is like a super busy chatter box and I find it quite hard to focus on one task at a time. To honestly answer your question I must go back 7 years to time when I had my son and had to make some serious changes to maintain my mental health. I used to lead very busy life and didn’t spend much time around home and then it all changed with a newborn baby and postnatal depression as a cherry on top. For a first time in my life I’ve lost my confidence and felt extremely vulnerable like never before. But being a stubborn and change loving Aries there was a tiny warrior left in me to fight against a mess depression creates. So I started doing things I used to laugh at. Like a meditation. I’m a restless creature and sitting quietly on my own was my idea of hell.Pointless and boring to be precise.My life always had to be super fun, but when I couldn’t dig out any happiness from life I was literally forced to learn how to chill, how to stop and rest and not just physically but mentally too. I still find sitting meditation hard and very rarely do it but thanks to a research I’ve done about meditation I learnt that there are loads of types of meditation and the one working for me is walking/running meditation.When I run I listen to a rhythm of my footsteps and when I walk I usually combine meditation with mindfulness…it’s actually quite easy because we’re surrounded by beautiful things. So if I struggle to write with how to begin my article I usually take a break and do something physical for a while and jump behind laptop right afterwards before I start overthinking things. That’s when usually my words fly and even though I have to edit and correct it several times before publishing the core of the article is there and that for me is the hardest bit. Couple of practical tips…I get distracted by misspellings so I cover my screen with sheet of paper and correct all grammar when I’m finished. When I’m dealing with writers block I use crystals like Blue Fluorite and Aventurine for creativity, Amethyst to increase my concentration and Citrine and Tigers Eye for clarity.
      I hope you’ll find my suggestions helpful. Writing is a beautiful discipline but could be extremely frustrating when we can’t spit the words out the way we want 🙂 I wish you all the best with your writing, don’t give up because after all you’re doing what you love and that’s what really matters. 🙂 And please feel free to send me a link to your articles.
