Jacket potato is one of my favourite lunchtime meals. Crispy potato skin, soft flesh and endless choice of fillings. I picked sweet potato for this recipe but it can be done with regular white potato too.
I like sweet potato for it’s taste and texture but also for high content of vitamin A, C and fiber. Turkey meat is a great meat, rich in protein but low in fat. Turkey breast meat is also low in saturated fat so regular consumption can help lower cholesterol levels.Low GI (glycemic index) also reduce the risk of heart disease and can help to manage insulin in our blood system. Small increases in insulin keep you feeling full and energised for hours after eating and also encourage the body to burn fat.And that’s exactly what I need, well balanced meals to keep me from snacking in between meals and help me finally loose those few extra pounds I’ve been carrying around far too long.

Ingredients:
4 sweet potatoes
1 tbsp olive oil
1 onion finely chopped
1 clove of garlic finely chopped or crushed
500g mince turkey
500g tomato puree (passata)
3 tbsp BBQ sauce
1/2 tsp Cayenne pepper
Himalayan salt/ Sea salt
4 tbsp creme fraiche
chives
Method:
Heat oven to 190….Use a fork to prick potatoes all over and bake for 45 minutes or until tender
Meanwhile heat the olive oil in a frying pan over a medium heat. Add onion and cook for 6 minutes until soft
add the garlic and turkey mince and cook for 10 minutes, break the meat into smaller pieces and brown.
Add passata and 100 ml water. Add BBQ sauce, Cayenne pepper and simmer for 15 minutes or until the liquid has
reduced.
Cut a cross in the top of each potato and spoon in the turkey Serve each potato with big dollop of creme fraiche and sprinkled with chive….and ENJOY
